About the Role
The Director of Beverage will provide direction and leadership for the Beverage and Cocktails team. Responsible for leading the beverage management team in achieving the operational and financial goals of each beverage venue, monitoring the performance, scheduling, and training of the staff; maintaining the facilities in accordance with service standards, and ensuring high customer satisfaction and exceptional guest experience. All duties are performed in accordance with company policies and procedures.
Position Responsibilities
- Oversee leadership in the development and monitoring of beverage operations, fiscal budgets, guest service standards, timing standards and marketing strategies to produce both short-term and long-term profitability.
- Establish par levels for supplies, liquor, beer, wine, and equipment, completing requisitions to replenish shortages or additional items needed for the anticipated business.
- Work closely with the Director of Wine and Spirits and supplier/distributor partners to maximize brand partnership opportunities.
- Develop master pricing lists with appropriate tiering for all venues on property.
- Work with the Director of Wine and Spirits to create master recipe guides for all cocktails.
- When necessary, fulfil the role of property mixologist to refresh cocktail menus around property.
- Plan, prepare and oversee seasonal venue openings such as indoor/outdoor pool and other venues as assigned
- Act as a liaison to other departments with beverage needs including Special Events, Entertainment, Butlers Services and others where appropriate.
- Oversee implementation of policies, operating procedures, training programs, directives, menus, work schedules, rules and regulations for the beverage staff and personnel.
- Maintain the highest standards of health, sanitation, and cleanliness within all areas of Beverage. Maintain complete knowledge and strictly abide by state liquor regulations, particularly those prohibiting service to minors, intoxicated persons and drunk driving.
- Interview, select, train, supervise, counsel and coach beverage management and line staff for efficient operation of the outlets
- Drive employee engagement through engagement, coaching, training, and development.
- Perform other job-related duties as requested.
Essential Functions
- Must have ability to sit /stand and work from workstation for extended periods
- Must be able to twist and bend while standing and sitting in order to access files at desk and in file cabinets
- Must have the manual dexterity to allow for inputting of data into computer software and be capable viewing computer monitors for extended periods of time
- Must be able to read “fine print” areas of invoices and contracts
- Must be able lift/push/pull up to 25 lbs
- Exposure to casino related environmental factors, including but not limited to secondhand smoke, excessive noise and stress related to servicing customers in a fast pace environment
- Ability to work holidays, weekends, as well as flexible shifts and/or unusual hours
- Ability to effectively communicate in English
Requirements
- Eight to ten years’ management experience in food and beverage.
- Shift assignments may be irregular, and will cover days, nights, weekends and holidays
- The ability to effectively communicate in English
- Exhibits superior communication skills and abilities
- Working knowledge of computer software applications and practical usage preferred
- Previous managerial experience preferred
